Collection: Knives

These are not our knives, and we will say so plainly. They are forged by STEELPORT in Portland, Oregon, about an hour up the road from our shop, and they are the only knives we carry because they are the only ones we wanted on our own boards.

Carbon steel takes and holds an edge in a way stainless does not. It also asks something of you in return: dry it, oil it occasionally, and it will develop a patina and outlive you. If you want a knife you never think about, this is not it. If you want a knife you keep, it is.

Carbon steel and end grain are a natural pair, since an end grain block lets the edge settle between the wood fibers instead of across them.
