Is Teak Safe for Cutting Boards? And Will It Dull Your Knives?

Almost every question I get about teak comes down to one of two worries. The first is whether teak is safe to put food on, because it is an oily tropical hardwood and people have heard vague things about tropical woods. The second is whether teak will chew up a good knife, because somewhere you read that teak contains silica and silica is basically glass.
Both worries have real facts underneath them, and both get answered badly online, usually by someone who has never pushed a board of teak across a jointer. I mill this wood in my shop in Albany, Oregon, so I can tell you what teak does to steel and where that stops mattering.

The short answer
Teak is safe for cutting boards. It is not on any credible list of woods to avoid for food contact, and the compounds people worry about are the same ones that make it rot resistant. Teak will not meaningfully dull your kitchen knives. Its silica is genuinely hard on saw blades and planer knives during milling, but milling is a high-speed, high-heat process with almost nothing in common with slicing an onion.
- Food safety: Teak heartwood is not listed as toxic for food contact. The documented hazard is the sawdust, not the finished board.
- Silica: Teak really does contain silica. One measured provenance trial found 0.27% to 0.66%, while the commonly quoted upper figure is "up to 1.4%." The number is not settled.
- Knife dulling: Silica is why teak destroys steel planer knives in a shop. There is no good evidence it does anything comparable to a kitchen knife on a finished board.
- Hardness: Teak is about 1,070 lbf Janka, hard maple 1,450 lbf, black walnut 1,010 lbf. Teak is closer to walnut, which makes it forgiving on an edge.
- Natural oils: Teak's water resistance is real, and it is one reason the wood holds up in a kitchen.
- The honest caveat: Teak is ring porous and coarse textured, so it is not "close grained" the way hard maple is. A non-issue at home. For an inspected commercial kitchen, ask first.
Is teak safe for cutting boards?
Yes, and I want to be specific about what that rests on, because "yes it's safe" is what everyone says and most are guessing. The species woodworkers warn against get warned against for concrete reasons: open-pored woods like red oak and ash because they are harder to keep clean, oak because its tannins react with metal and stain, pine because it is soft and resinous. Teak has never been on those lists.
The strongest evidence on wood boards comes out of Dean Cliver's lab at UC Davis. His group tested more than ten hardwood species and found "essentially no differences among the tested wood species." Bacteria applied to wood disappeared quickly and did not multiply. Knife-scarred wooden boards behaved almost like new wood, while knife-scarred plastic was impossible to clean by hand. A Northern California case-control study found wooden board users were less than half as likely to contract salmonellosis.
That research did not single out teak and I will not pretend it did. What it establishes is that species choice among hardwoods is not the variable driving food safety. Care is. More in my comparison of walnut, maple, and teak cutting boards.
Is teak wood food safe?
Teak wood is food safe. The compound people ask about, tectoquinone, is an anthraquinone that gives the wood its resistance to fungi and termites. It is why a teak deck lasts thirty years outdoors. It is not a food toxin, and no body of literature suggests otherwise.
One honest note most articles smooth over: the research is not fully settled. Several studies correlate tectoquinone content with decay resistance, while one review notes other work found tectoquinone alone did not account for durability, proposing squalene instead. The mechanism is contested. The outcome is not. Teak heartwood resists rot and insects unusually well, and nothing in that chemistry is a hazard on a plate.
What about the silica in teak?
Teak does contain silica. The tree takes it up from the soil and deposits it in the wood, and it is visible: look at the end grain under magnification and you will see whitish deposits alongside the tyloses. That is mineral matter sitting inside the wood cells.
The amount is where sources disagree. The figure copied across the internet is "up to 1.4%" silica, with a pronounced blunting effect on cutting edges. That is an upper bound, not a typical value. A provenance trial published in Silvae Genetica in 1999 by Kjaer, Kajornsrichon and Lauridsen measured heartwood silica in five teak provenances and found averages from 0.27% to 0.66%, varying between and within them.
The honest statement is that teak's silica is real, varies with where the tree grew, and probably runs from a few tenths of a percent to around one percent. Anyone quoting one number has flattened a range.
Why it matters is hardness. Silica is essentially quartz, at 7 on the Mohs scale. On the same field scale a pocket knife blade tests around 5.5 and a hardened steel file around 7. Silica is at or above the hardness of the steel you are cutting with. That is the entire mechanism.
Does teak dull knives?
Not in normal kitchen use, no, and I say that as someone whose tooling budget has suffered for this wood. The confusion comes from collapsing two different things into one sentence. Milling teak and cutting on teak are not the same activity, and the silica behaves differently in each.
Milling teak, where the silica genuinely matters
When I run teak through the shop, it eats tooling. This is not a rumor I am repeating. Professional millwork shops report high-speed steel knives going totally dull after roughly 50 to 100 linear feet of teak, which is why the standard advice for production work is carbide tipped or coated tooling instead of steel. Teak also runs hot and nicks an edge fast.
Consider what that involves: a blade traveling thousands of feet per minute, buried in the wood, cutting continuously through hundreds of square inches of fresh internal surface, generating enough heat to soften an edge. Every silica deposit is an abrasive particle dragged across steel under load. Of course it dulls.
Cutting on a finished teak board, where it largely does not
Compare that to dicing a bell pepper. Your knife moves at a walking pace and touches the board for a fraction of a second per stroke, at the end of the cut, with the weight of your hand behind it. It meets a sanded, oiled, sealed surface, not freshly opened internal fiber. No heat, no continuous engagement, no sustained abrasive load.
Even makers who compete with teak concede this when careful. The rule of thumb that silica above roughly 0.5% is hard on cutting tools is explicitly about harvesting and milling equipment. One competing board maker puts it plainly: the silica issue "is usually only a problem for the equipment used during the harvesting and milling processes."
I have not found a controlled test measuring kitchen knife edge retention on teak versus maple versus walnut. If one exists, I would like to read it. Absent that, the mechanism people cite requires speed, heat, and sustained contact, none of which are present on a cutting board.
What actually does affect your edge
Board hardness, and teak is on the friendly end of it. Janka measures the force needed to embed a steel ball halfway into the wood: hard maple 1,450 lbf, teak 1,070 lbf, black walnut 1,010 lbf. If maple is the gold standard, note that the gold standard is the hardest of the three, the opposite of gentle on steel. Same tradeoff as in the walnut versus maple comparison: harder boards show fewer knife marks and are rougher on your edge.
Teak's natural oils and water resistance
Raw teak has a slightly oily, almost greasy feel. That is not a finish someone applied, it is the wood's own extractives, and it is why teak is traditional boat decking and why teak garden furniture survives Oregon winters.
For a cutting board, water resistance is a safety feature and not only a durability one. A board that absorbs less moisture moves less, checks less, and dries faster after washing, and wood that dries faster spends less time in the state bacteria prefer. Teak heartwood is rated very durable against decay and highly resistant to termites, though only moderately resistant to marine borers, a specificity that tells you the rating is measured, not marketed.
None of which means a teak board maintains itself. Oil it. The extractives slow water absorption, they do not stop it, and a dry board cracks. Our Board Cream is mineral oil, vitamin E, and beeswax.
What about teak sawdust? That is a different question
This is where most of the "is teak toxic" anxiety starts, and the two concerns are not the same. Teak dust is a documented irritant. Occupational health references list teak as causing dermatitis and acting as a sensitizer, with reported effects including skin and eye irritation, respiratory symptoms, and asthma-like reactions. ACGIH rates teak dust a suspected human carcinogen, the same tier as walnut, birch, and mahogany.
Now the context that never gets included. The International Agency for Research on Cancer classifies wood dust generally, all soft and hard woods, as a Group 1 human carcinogen, and oak and beech dust sit in a higher hazard tier than teak. Beech and maple are the species most often recommended as safest for boards. If dust hazard disqualified a species, those two would go first.
It does not, because these are separate questions. One is a woodworker breathing airborne particulate for years. The other is a cook slicing a tomato on a sealed surface that makes no dust. I wear a respirator when I mill teak. You do not need one to make dinner.
